sometimes i can't sleep on sunday night. tonight i laid in bed thinking about leaffooters, my job and it's last day, and stuff i am desperate to get done around the house. i also have tons of things to do and am traveling a lot this summer. i am determined to make a strawberry headed doll, i need to clean this house from top to bottom and and and.
dinner was delicious tonight. i made refrigerator spring rolls, which tend to be whatever's lying around wrapped in a rice papper wrap and dunked in peanut sauce. tonight's were filled with mock seitan duck, fresh mint, fresh summer squash sliced thin on the mandoline, fresh basil, fresh shiitakes, and a little salad of shredded raw beet and carrot mixed with a bit of rice vinegar, salt and agave nectar. the peanut sauce kicked too: unsweetened pb mixed with warm water, hoison sauce, sriracha, nama shoyu and a tiny bit of salt--topped with roasted p-nuts.
