Oh sure, I'll be that girl that blogs about how good her lunch was.....'cause in fact, IT WAS DELICOUS!
A bit of back story if I may please:
I met a fantastic guy recently and have been spending 99% of all my free time with him. This is a great thing! A want that I am happy to give in and take pleasure with. BUT, and there's always a but right?, it has taken time from routines I've come to rely on for sanity. The most important of these include my work outs, Tai Chi and meditation. An hour of the day that is all mine.
After spending another weekend with him, I woke this morning and had some black coffee with my mom and decided to start my daily routine.
I begin like everyone else, stertches and a warm-up jog -in-place for 15 minutes. Then I jump into the norm, crunches and lunges and then weights. (just so you know, I am not a hard body or that strong)
I FOUND I WAS EXHAUSTED! So, I broke, did some warm down stretches and moved right into Tai Chi. I was surprised to realize that I forgot most of the 24 moves I had learned just this past summer, but took advantage of the breathing excises. I was disappointed in myself and could find no way to settle that feeling and meditate.
This is supposed to be about lunch though:
Now I am starved and move to the kitchen. I preform my Cinderella tasks for the day, laundry and emptying/flling the dishwasher. Good Kit Kat!
I spy a basket of ripe tomatos, omg! Chop chop chop and toss in a bowl. Over to the fridge I go....YES, we got feta! Crumble most of it into the bowl with the tomato. Oh look, pepperchinis! In they go!!! Now, what else.....I toss in about a tablespoon of the juice from the pepperchinis and drizzle just a tad of extra virgin olive oil! OMG! SO GOOD! Now a slice of dry, whole grain toast and I am good to go!
So in conclusion, I worked out, ate a fabulous lunch and now am so stuffed I can not move to get ready for work!
