Cookies always make it feel like Christmas

Unlike my mother, who still tries desperately to "do it all" at Christmastime, I don't. I am not afraid to go lower key. But I still like Christmas cookies. I still make them. I just don't make 8 or more batches. I make four religiously and anything else? Eh. In January or during break if I feel like it. Of the four I make, this is the easiest, the please-iest, and a the prettiest. Need a cookie recipe in a pinch? Here ya go! Feel free to share and pass around to whomever you like! *g*

Chocolate-covered Sugar Cookies
(adapted from a recipe in the Pillsbury Baking Book)

¾ cup sugar
1/3 cup softened butter or shortening
1/3 cup of oil
1 T of milk
1 to 2 tsps of flavoring
1 egg
1 ½ cups of flour
1 ½ tsps baking powder
¼ tsp salt
½ to 1 cup chocolate chips
Topping

Beat sugar and butter together until creamy. Add oil, milk, flavoring and egg until light and fluffy. Stir in dry ingredients and blend well. Spread evenly in a jelly roll pan. Bake at 375 for 10 to 12 minutes until light golden brown.

Immediately after removing from oven, sprinkle liberally with chocolate chips. Let the chips melt for a minute or two and then spread evenly over the entire cookie with a spatula. Sprinkle the still-warm chocolate with the appropriate topping. Let cool and cut into bars.

Flavor combos -
1. vanilla flavoring with crushed butter brickle topping
2. vanilla flavoring with sprinkles/jimmies/crystal sugar
3. almond flavoring with crushed nut topping
4. peppermint flavoring with crushed candycane topping (this is my family's favorite)

PS: Wanna make it even EASIER? Use the premade rolls of sugar cookie dough that are available in the dairy aisle. Unroll, press into jellyroll pan, follow the rest for baking, chocolate, topping. *g*
