My suggestions for the names of Gwen Cooper's future children are:
Ianto Owen Williams
Toshiko Jack Williams
I assume they'll be using Rhys' last name, but Cooper would work just as well, or even better.
I especially nominate Toshiko Jack. It would also make a bitchin' name for a ship. =)
