so why is it that four of the ones that i like have to be at the same time, on Monday nights? I guess the world is trying to encourage me to give up the guilty pleasure of Gossip Girl. Meh

~2 c packed butternut squash, raw and grated 1/2 onion, grated 1 egg, lightly beaten 1/2 c finely chopped hazelnuts 1 c flour salt and pepper milk, as needed 2 T olive oil or melted butter
mix veggies, onion, egg, hazelnuts and flour together, sprinkle w/salt and pepper, add just enough milk so that the mixture drops easily from a large spoon. stir in 2 T butter or olive oil.
add a spoonful of oil to a large skillet or griddle over medium heat. when it's hot, drop in spoonfuls of batter and spread into an even layer. cook, turning once, til nicely browned on both sides, about 15 minutes.
