Well for starters "quite" was supposed to be "quiet." Thats the real problem. If you fix that this is why the parantheses would work-
"It seems like she can be really quiet but she seems to open up after you start talking to her."
"It seems like she can be shy at first but she seems to open up after you start talking to her."
The parantheses are there because you can use either "really quiet" or "shy at first," to describe what she is like. Plus her being "really quiet" is not a permanent trait. Like I say later on; once you start talking to her she opens up. ;)
