CUPFAKES!!!

Mmm...delicious looking, no? Creamy frosting and SPRINKLES, yes?

But why 'cupfakes', Monkeys?

So, I wanted to do something special for my BIL's first Father's Day. E is a real carnivore, and the only vegetables he really eats are corn, beans, and potatoes. Cooking nice dinners gets a little tedious and exclusionary, so I made something just for him. And tripped out his taste buds and his brain in a major way. :)

These pretty cupcakes right here?




Are mini cheeseburgers topped with instant mash and colored salt.

Here's how I did it:

I mixed some ground beef with salt, pepper, garlic powder, worchestershire, and an egg to bind. Then I packed six muffin tins halfway-full with the mixture, added a quarter slice of Velveeta, and topped with more meat.


 


I baked them (with water in the outlying empty tin cups) at 350 degrees for about 15 minutes. They really greased up, so I set them on some paper towel to drain.


  


Meanwhile, I made the 'frosting' - instant mashed potatoes with far more butter and milk than called for in the box instructions, just to get that creamy texture. Added a few drops of yellow food color, and stirred until I had a buttercream consistancy.


 
 


I put some kosher salt in a little plastic container, added a drop of blue food color (E is a UofM grad - hence the blue and yellow) and shook it up for the 'sprinkles'.


  


Next, I dropped the drained, cooled burger-cakes into foil cupcake liners, scooped my potato frosting into a ziploc bag, and snipped the corner to pipe.


  


I laid the 'frosting' on nice and thick, then sprinkled with the colored salt.




Everyone got a big kick out of them, and they tasted pretty damn good after warming them for a few seconds in the microwave and dipping them in ketchup. :)
