Of muffins and tarts (formerly known as hos)...

First off, thanks to everyone who said such nice things about 'Ink on Paper Leaves a Mark' - and didn't mention 'Sharpness of the Outline' at all. I'm GETTING to it. I promise.

Second. This morning I made some really delicious french-toast muffins with maple glaze and bacon. YES. Glazed MUFFINS with BACON on top. quellefromage  - are you reading this?







Yeah. That's BACON on top. Think of it as a breakfast cupcake. Delicious with a nice espresso out on the deck. I used this recipe, and changed it just a bit...substituted canola oil for the butter (which makes a generally moister cake, less dense) and added about a teaspoon of vanilla. The glaze is just confectioner's sugar with half and half and maple extract. I didn't measure, but it was probably about 3/4 cup sugar, two tablespoons of half and half, and a teaspoon of maple. stirred it up to a dipable consistancy and just swirled the muffin tops in the frosting, then topped them with a few chunks of crisply fried bacon. YUM.
