In January I took a stab at
Alton Brown's recipe for homemade protein bars. They were ok but honestly tasted a lot like chalky/floury protein bars, not delicious and palatable like I wanted them to be.
So after rummaging around for another recipe and reading up A LOT on the benefits of a whole food nutritional bar, I combined several concepts to achieve the latest version of Kim's Protein Bars. Basically it has a peanut butter and honey base, very little sugar (1/4 cup brown), no flour, reduced amounts of dried fruits (only cranberries and raisins in this version), and more nuts and seeds (almonds, pumpkin seeds, and flax seed).
I think they came out WAY better except they are super crumbly. It's all good though because I've been sprinkling it over
Stonyfield Organic Fat Free French Vanilla yogurt every day for breakfast.
