One of the things that makes me feel a million times better after a long day or week is coming home and baking.
This week I found two excellent recipes over on
Smitten Kitchen I was dying to try.
The first was
Chocolate Toffee Walnut Cookies. Yum, right? The recipe calls for 4 eggs and to beat them with the sugar for 5 minutes straight. I think this aerated and leavened the cookies more than I normally would like but they were so delicious for it. They were light and crispy, just perfect. Next time I might add a touch more flour and let the dough chill for an hour or so.
The second cookie I made was
Toasted Coconut Shortbread Cookies. I love shortbread. Shortbread is a fancy word for butter cookies. And mixed with toasted coconut was perfection. I would make these with more coconut and less flour next time. And use my new cookie cutters from
Le Roux Kitchen that I bought this weekend while we were up in Portland.
