So I and three friends made four apple pies last night. We had a taste test but none of them came out the winner cuz they were all winners. My girlfriend made a bunch of the crusts and I made three of the fillings. Basically you start by sauteeing apples in butter and then creating a sauce. Usually after the apples are done I will try to take them out of the pan using a slotted spoon and then reduce the sauce until it's only a bit syrupy cuz it can make your crust soggy. So keeping those basic steps in mind, here are the ingredients for the fillings:
Pie #1: Kitchen Sink
We raided my friend's spice cabinet for anything we could find that would go well in an apple pie. The sauce thus consisted of:
apple cider
maple syrup
ground cloves
*fresh* ground nutmeg which was the only kind he had, OH WELL
cinnamon
mace
allspice
and about a half a cup of sugar.
Pie #2: Apple-Molasses
We wanted to put my usual recipe
up against the Joy of Cooking recipe but we decided it was too boring cuz the Joy recipe only calls for cinnamon and sugar and sauteeing the apples in butter. LAME. So we put the following in the next sauce:
a lot of blackstrap molasses
more sugar than last time
cinnamon
nutmeg
Pie #3: My Juicy Bourbon Apple Pie
This is my standby recipe because it's what I usually have in the house. Well, in apple season, anyhow:
apple cider
maple syrup
a good dose of bourbon - maker's mark if available
sugar
cinnamon
nutmeg
cardamom
