Inspired by seeing Bayless make something similar in an Iron chef battle against Flay.
It was an old episode (Flay's record was 3-1 at the time) and you could tell that Alton was not as polished. Kevin Brauch was really green too, he couldn't pronounce guajillo and Rick Bayless called him out on it. :) Flay's side was a lot more chaotic, too, not the well-oiled team that I'm used to seeing these days. Funny to see such larger portions, and Flay smearing sauce and deconstructing a salad. Weird.
After pressing a fresh corn tortilla, immediately fill it with goodies, pinch it closed, lightly spray with oil and bake at 425 F until lightly browned. Flip halfway through baking.
They look drier than they tasted (cheesy filling helps). I would recommend a dipping sauce or saucy side. Enchilada sauce would be the easiest; though if you're using that, you might as well make enchiladas which aren't as labor intensive as empanadas.
I use a plastic bag in my tortilla press to make the tortillas, which I also used to help fold the tortilla over the fillings.
