Christmas Pudding

First time I need of make Christmas Pudding. Is business convention English people in Kyiv Christmas UK.

I never make before. I cheeky. Ask Pedt if Sheila give me recipe as know is good, I eat much Christmas I visit. I have tell I allow share. I have sample at weekend and is much good. Half I not eat Saturday, eat Sunday, I fry slices.

Is go on menu "Sheila's Christmas Pudding". Pedt say she pleased.

This is recipe as receive. Is make of 3 pudding serve of 4 people, big portion. 4 pudding serve of 4 people not big portion.

6oz Self raising flour
8oz Suet
6oz Breadcrumbs
8oz Brown sugar
8oz Raisins
8oz Currants
2oz Candied peel
2oz Almonds, chopped
1 teaspooon Mixed spice
1 teasppon Salt
Juice of one lemon
Zest of 2 lemons
4 Eggs
2 tablespoon brandy
Milk if needed

Sieve flour with salt, add sugar and all dry ingredients. Beat eggs and mix into dry ingredients. Add lemon juice and a little milk if necessary.

Put into greased basins and cover with greased grease-proof paper to cover all of pudding. Add cloths to cover top and sides and boil for 8 hours in bain marie. It is better to boil in 2 x 4 hours with one day between boiling.

Make one month or more before use. It is better if it stands after boiling.

When serving, heat in bain marie for 1 hour.
