I tried to make huckleberry ice cream today. I did everything right, and it still failed. I had the custard appropriately chilled, put it in the freezer bowl, and started churning it. It reached milkshake consistency, liquid but with ice crystals, and then it thinned back out. Have you guys had this problem?
My freezer bowl is certainly not that cold after a couple hours of trying to churn the custard, but it had been in the freezer for months, so I'm not sure what else I could do to get it colder.
I think the high speed was my mistake, so we refroze the bowl last night, and I'll try churning the stuff again when I get home from work today.
If only I could achieve just beyond milkshake-ish! It finally reached almost-milkshake after about 30-40 minutes, and I froze it overnight, and it was still really, really soft after that. (The melting introduced by mixing in the berries killed the texture, though, which was admittedly not too bad before that.)
I'm wondering if our freezer is just not that cold. It's packed pretty full, which would probably be a contributing factor.
