Kiwi Fruit Ice Cream Experiment!

I tried something like this when my sister was visiting, but I didn't write down what I did. So here it is, slightly different, but with proper notes.

Kiwi fruit and dairy are an impossible combination; the kiwi fruit curdles the dairy, as I discovered to my chagrin when I tried to have Bircher museli with Kiwi fruit. But I thought maybe, since curdling makes curds and whey, that using powdered whey might work.

Experiment #44: Kiwi Fruit Whey Iced Confection
Recipe:
* 4 Kiwi fruit
* 125ml Whey Powder
* 1 t Xanthan gum
* 4 T Xylitol
* 2 T Erythritol
* 3 T Splenda granular
* 125ml water
Puree the Kiwi fruit. Add the water and blend it into the mixture. Add the whey powder, gum, xylitol and erythritol and blend them in. Add Splenda to taste.
Result: Lovely creamy texture, mild Kiwi fruit taste, but with a slight undertone of bitterness. My sister didn't notice any bitterness with the original batch I made, but I did, so it might just be a supertaster thing.
Lessons: Whey probably doesn't work with kiwi fruit; I suspect that if the mixture had been left standing, there would have been much more bitterness. I shall have to see what effect being in the freezer has on it.
