Maple Brownies

Dry Ingredients:
2/3 cup white rice flour
1/3 cup cornstarch
1/3 cup sweet rice flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2 teaspoon xantham gum

Wet Ingredients:
1/2 cup (1 stick) soy-free earth balance (softened)
1/4 cup granulated sugar
1/2 cup packed dark brown sugar
1 egg:   1 tbsp. of ground flax mixed with 3 tbsp. of hot water, let sit a few minutes til it becomes gelatinous
1/2 teaspoon vanilla extract
1/2 cup maple syrup

1. Preheat oven to 350 degrees.  Grease a 9 inch square pan with cooking spray. (I used a 9.5 inch round)
2. In a small bowl, whisk together dry ingredients
3.  In a medium bowl, cream together butter, granulated sugar and brown sugar for 1 minute (use high speed on a hand mixer, medium on a stand mixer0.  Add "egg" and mix until thoroughly combined.  Add half of the dry ingredients, blend until smooth, about 30 seconds.  Add vanilla and maple syrup; mix until thoroughly combined.  Add remaining dry ingredients and mix for 1 minute. 
4.  Spread batter evenly in prepared pan.  Bake 25 to 30 minutes until golden brown.
5.  Remove pan from oven and place on a wire rack to cool completely.  Cut into 9 or 12 squares.

Grade B maple is "cooking syrup" and recommended.  I think I used "eating syrup" - it appeared to work just fine :0

She made these for last Saturday's potluck...they were amazing! Gooey, sweet, delicious...I usually don't get overly excited about desserts because even though I have a crazy sweet tooth, I'm kinda picky about sweets. Not a huge fan of chocolate, certain fruits are okay but they can make the dish "eh", etc etc. I loved everything about these- it was super exciting. NOM!
