Stuffed Peppers (mostly so I can remember how to do this in the future)
1- made a bunch of basmati rice using mostly tomato juice instead of water
2- had 6 peppers- cut off the tops & cleaned them, dumped them in boiling water for 2-3 minutes
3- olive oil on stove- first used garlic, added a bunch of scallions, then pepper (from the tops) and italian spices...sauteed for a bit, then added some fresh basil and chickpeas. when done i threw into a bowl, added most of the cooked rice w/a few spoonfuls of tomato paste and more spices and mixed.
4- preheated oven to 350. stuffed peppers with rice filling, added a tiny bit of olive oil to the top of each pepper. baked for approx 45 minutes.
