I have been on a new recipe kick this week. Here are two that have worked out beautifully:

Creamy Pumpkin Pasta

Quick, easy, and very very tasty. Not the healthiest ever - at least as written - but I bet you could substitute milk for the cream and just simmer a little longer to get the same thickness. (I didn't use pine nuts or puree the sauce out of laziness and it worked out just fine.)

Creamy Potato Garlic Soup

The prep time was incredibly fast, though the cooking time was slow. Very tasty, and made quite a lot. Again, not terribly healthy as written, but I used reduced sodium & fat chicken stock and next time would swap in milk for the cream.

I'd also consider going up to 2lbs of potatoes, as mine didn't come out quite as thick as the pictures on the recipe.
