Well, that (almost) worked!

Spicy Pepper Couscous

1 onion
1 Clove garlic
Chilli peppers (turns out mine weren't as ripe as I thought)
Two sweet peppers
Cinnamon
Cumin
Coriander (both parts)
Marjoram
Vegetable stock cube

250g Couscous
Black pepper
Lemon olive oil

Crush the garlic, finely chop the chillis and coarsely chop the onion. Dry-fry over a gentle heat for a few mintes, then add some water and turn up the heat. Add more water as required to prevent smoke and cook until softening.
Dice the sweet peppers and add them. Crumble in the stock cube and add more water, but no more than a few tablespoons.reduce the heat.
Add the spices in whatever amounts you like. Balsamic vinegar can help reduce the strength of some of them if required.
Grind some pepper into the dry couscous. Add the required amount of boiling water, and stir gently with a fork until the visible water is all but absorbed. Drizzle in some lemon olive oil and stir a bit more.
Tip the couscous into the frying pan with the pepper mix and stir well. Serve on its own (as we just had) or with Stuff - probably grilled chicken or pork.
