The following sauce can be used for vegan mac'n'cheese or vegan lasagne.
3 large tablespoons margarine
3 large tablespoons flour
1/4 tsp mustard powder
1 ltr soya milk
1 tsp marmite
3 tbsp nutritional yeast flakes
100g vegan grated mozzarella style cheese (e.g. Tofutti)
Melt margarine in a pan, then stir in flour and mustard powder until you get a yellow pastry-like substance. Pour in a small amount of milk, and stir till no lumps exist. Then add marmite and yeast flakes, and keep adding milk a bit at a time until you have a glossy thin yellow sauce. Add the vegan cheese, and stir well until it's all dissolved.
The key is lots of stirring.
