This is the only decent way I've found to cook polenta in an interesting and tasty way.
1.5 dl polenta grains
7.5 dl water
1 vegetable stock cube
2 tablespoons olive oil
Boil water in a pan with stock cube. Add oil and polenta. Simmer for 6 minutes. Pour into a glass pie dish and allow to cool. Tip out onto a work surface and cut into large "fries" shapes. Place on an oven tray and bake in the oven at 200C for 30 minutes until crispy on the outside and fluffy on the inside.
