Edith's Excellent Cucumber Sandwiches
Ingredients:
White bread
Butter
Cucumber (peeled and thinly sliced)
Fresh mint leaves (chopped)
Lemon juice
Salt and pepper
How to:
Spread all slices of bread with butter
Cover one side of the sandwich with two layers of cucumber slices
Add a thin layer of mint leaves
Season with lemon juice, salt and/or pepper
Put the slices together, cut off the crusts and slice the sandwiches into small squares

Captivating Clotted Cream a'la Sybil
Ingredients:
Heavy cream
How to:
Heat the cream slowly for 12 hours so that the fat separates to the top and clings together
Let it cool for 8 hours
Gently skim the thick layer of cream and stir it to create a smooth texture
Serve with freshly baked scones

Mary's Many Strawberries Jam
Ingredients:
2 quarts fresh strawberries
5 cups sugar
1/2 of lemon juice
How to:
Wash your jars and their lids
Wash and remove stems from strawberries and mash them up
Stir in sugar and let sit for 2 hours.
Add strawberry mixture to a large pot and bring to a slow boil over medium heat until it boils
Turn heat up and let strawberries boil rapidly for 5 more minutes
Add lemon juice and let the mixture boil for five minutes
Pour the jam into the jars and add lids
Place the jars in a hot water bath and boil for 10 minutes
Let them cool in room temperature before storing in a cold dry place
