Yes, on Easter, even Denise has a little lamb....

Okay, this is what I was busy doing this morning after the Easter eggs were all found and my son was gorging himself on candy (after breakfast, of course!) The cake itself is almond pound cake and the frosting is butter-cream. It should have been coconut, but we're in the South and if you don't set up a tent in the baking aisle three days before Easter, you are out of luck coconut wise. (A rude awakening for this NY transplant who expects to find coconut in the grocery store, no matter what time of year it is.) The reason for making lamb cake? Well, my great aunt died a few years ago, and this year her husband died as well. My dad was raised by them, and this lamb cake was a thing she'd make for my dad every year when he was a kid. (Dad couldn't have chocolate, I don't know why.) When my cousins were going through the things at their parents house, they found a list my great aunt made, leaving me the lamb cake mold. And, being the sentimental, sappy mush that I am, I made this cake for my dad instead of my usual Easter rice pudding. (Also a family recipe, but what the heck..) We'll be heading over there soon, and I can't wait to see my dad's expression. Hee!
