AotC: I enjoyed the deleted scenes on Naboo, actually. If I have to pick, the scene when Dooku has Obi-Wan prisoner. Their conversation is interesting.
RotS: The whole Ruminations bit when the view switches between Anakin and Padme on Coruscant.
ANH: The scene right before the trash compactor. It's hilarious.
ESB: Carbonite and I am your father (it's a rule that that has to be on any list :p)
