It's terrible, but I haven't made bento in almost 2 months! My start again bento includes: tofu lettuce wraps, peas, and Baybel cheese.
I've made these tofu lettuce wraps a few times, and I just kind of guess on measurements. But each time tastes pretty much the same, and yummy!
1/3 package extra firm tofu, finely chopped
1 small clove of garlic, crushed
Chopped onions, spring onions are best
Sesame Ginger dressing (I got mine from Trader Joes)
Soy Sauce
Lime juice
Sweet Chili Sauce
Crushed peanuts
Fry the tofu in a tsp of oil until sides start to brown. Add garlic and onion, fry for a few more minutes. Add a few squeezes of lime juice and let cook for another minute. Then add enough soy sauce to soak into all the tofu. Start adding dressing and chili to taste. I would say I used 3-4 tablespoons of dressing and 1 tsp of chili sauce. Saute for 5-10 minutes and let juices thicken. Allow to cool for a few minutes and serve with fresh lettuce leaves.
