Kale Chips

Kale is an interesting veggie; It's kind of a cross between a lettuce and cabbage with a nice crunch, but somewhat bitter taste. I had heard of kale chips and they were the first thing I made in my dehydrator. My first batch was not impressive. I tossed the fresh kale in olive oil and sea salt and the result was bland. Then I saw Gena make some with her tomato tahini sauce and the light bulb went on . . . I could use my favorite goddess dressing. So I did. I tossed the kale bits in goddess and left them for a bit to soak up the flavors. As I put them in the dehydrator I munched on a few, and then a few more got munched on the next morning as I took them out of the dehydrator. I cannot keep up with them because they are that amazing.

Kale chips can be made without a dehydrator at low temp in the oven (or in the microwave YUCK!), but much of the great nutrients in kale will be depleted.
