With the variety of life changes that I mentioned in my previous post, I've felt like I need to change my blog. I'll be blogging in both places for while and see how it goes. So, change number 1 was getting my Master's degree and change number 2 is my new way of eating. Since mid-April I have been eating mostly vegan semi-raw. I've cut out gluten/grains, the majority of processed foods, and am avoiding beans. The main reason is that I am determined to get my ulcerative colitis under control without medication and to be generally healthier. I've been devouring raw food blogs and books and I am lucky that my friend Barbara embarked on a similar journey at the same time (it's awesome to be on the same wavelength) and support each other. She also bought me a dehydrator, which is now getting more use than my oven!
I borrowed some raw food recipe books from the library and fell in love with Raw Food Real World, so I ordered myself a copy. There is more preparation involved with raw food, but it is so worth it!
Yesterday I prepped a couple recipes for this week, and tweaked them to simplify and make them a bit less expensive. Tonight I made a raw lasagna layered with: zucchini, raw tomato sauce, walnut pesto, cashew ricotta, broccoli, and tomatoes. It was heaven! I felt full and satisfied, but not that heavy stuffed feeling after eating "real" lasagna. Later this week I'll be using the rest of the cashew ricotta for beet ravioli and tomorrow I'll be having tacos with dehydrated corn tortillas and faux beans.
