Holy Grail

Since I've been a vegetarian I have not missed meat. Part of the reason is that there are excellent faux meats that taste yummy. But there has always been one thing that I have really missed . . . tuna salad. Right before I had become vegetarian (this was in high school) I discovered tuna salad on lettuce leaves. It was so tasty, and I have missed it. I had read in a few veg communities that mashing garbanzo beans with some mayo tastes like tuna salad. This sounded so skeptical (and kind of disgusting) but I kept hearing people rave about it. So, I grabbed a can of beans, mashed a few with some mayo and WOW, it really does taste like tuna salad. It doesn't have a fishy taste, but it does taste like tuna salad. I added some pickles, which was even better. Topped on lettuce made it prefect. A great low calorie, high protein, inexpensive, filling meal! Try it!

My apologies for the poor photo. I have to figure out how to take good photos now that we don't live with a fluorescent kitchen.
