Vegan food!

The past couple of weeks have been quite busy, and I've been quite tired. Ending the semester is always a bit stressful, but this time I also have a big paper due for my class. It's a "scholarly paper" and I finished the draft this morning (despite weeks of frustration). I'll give it an edit tonight, in the morning, and then turn it in. There were several days the past couple of weeks that I just came home and slept. Today though, I was in the groove. After finishing my draft I made lunch, did a load of dishes, and then bought some new plants and worked on the garden.

I have been able to make a few vegan foods in these weeks. I'm finding that my change in diet, and taking my thyroid pill, have left with with less of an appetite and craving more fruits and veggies. I've also been trying different foods.

This is what I had for lunch today:


My brother's girlfriend made this the other day and it was so tasty that I had to make it again (although it always tastes better when someone else makes it). The recipe came from the Food Network, but it very basic: red potatoes, green pepper, onion, garlic, red pepper, olive oil, and salt and pepper. She also made a tomato basil mix for the parmesaen chicken she made, but I ate it with the tomatoes and the flavor was great! The tomato basil cooled the spicy/salty-ness of the potatoes. It's simply a mix of tomatoes, basil, and salt and pepper.

On Monday I had made shepard's pie. This is the shepard's pie that my mom used to make when I was a kid, only vegan-fied. The bottom layer is veggie crumbles sauteed with oinion and garlic. The next layer is Bush's vegetarian baked beans. The top layer is vegan mashed potatoes (rice milk, tofutti cream cheese, margarine, and nutritional yeast). The photo doesn't do it justice.
