Salmon with Pomegranates and Lime

Salmon fillets, for however many you're serving.
1 pomegranate; 1/2 a pomegranate makes enough sauce for 2 - 3 people
1 lime; 1/2 a lime makes enough sauce for 2 - 3 people
1/8 cup butter (for 2 - 3 people)
1 tsp. green peppercorns

Poach, steam, grill or bake in foil -- choose your cooking method and cook salmon until opaque and firm. Not until it flakes; that's overcooked.

While the salmon is cooking, shell and seed the pomegranate (only half if there's only a few of you, see above) Melt the butter over medium heat until foamy, then add the green peppercorns and swirl for half a minute or so. Add the pomegranate seeds and the lime juice and swirl around.

Put the salmon on a plate, maybe on some greens, and spoon the sauce over. Goes nice with asparagus or sauteed green beans, and garlic roasted new potatoes.
