Tacos are one of the few meals that goes over well here. The kids like refried or mashed beans in theirs, Chris likes ground beef in his (hamburger with this taco seasoning mix). It's a meal that could stand to have more vegetables, but right now I'm happy if my kids actually eat something for dinner.

I have a crockpot and I luurrve it!! I'm having a hard time finding vegetarian recipes for it, though, do you have some good ones?!

Are you a vegetarian?

Minute brown rice with beans and cheese.

Mac and cheese.

Also, I make a baked veggie thing - Basically you cut up a bunch of veggies and layer it all in a casserole dish- meaty ones like eggplant or portobello mushrooms at the bottom, then tomatos, peppers, zucchini/yellow squash or whatever else you have. Make a sauce out of soy sauce, red wine vinegar, a little butter, and some spices like oregano, basil, garlic, etc. Pour that on. Put some mozzarella cheese on top if you want and bake for 45 min to an hour.

That one would be too involved for me for a quick dinner though.

I end up making stir fry sometimes on school nights. Or hot dogs and beans. Grilled cheese and tomato soup, I keep it simple!

We're sort-of vegetarian ... we eat meat other places, but not at home.
The baked veggie thing sounds wonderful. I might try that for dinner tonight.

Sqash and hearty baked dishes are great for the corning ware. There are also great for just serving dishes for veggies and such (wrap heated rolls in a kitchen/dish towel and plunk in a bigger dish - instant casual ellegance ( ... )
