Vegan Hot and Sour Soup

I had a couple of soft beets hanging out in the back of my fridge, as well as a half full box of less than perfect fresh shitake mushrooms. I also noticed a half full bag of carrots. I'm missing onions, and tofu. Or bread, and I was a little sick from the barbecue at my work today. I think I had too much pasta salad. So here's a recipe I modded to make a lovely hot and sour soup.

2 clove garlic
1 medium carrot, julienned
1 sugar beet, julienned
9 diced fresh shitake mushrooms
3 tbsp rice vinegar
3 tbsp light soy sauce (but you could use wheat free Tamari)
1 tsp red chili flakes
5 cups water
4 tbsp corn starch dissolved in cold water

Threw all the veggies in together into a pot, and then added the water. Then when it was boiling, I added the soy sauce and rice vinegar, and then the water dissolved cornstarch.

It was so good! Like a combination of borscht and hot and sour soup. Mmmm. Might add some cabbage next time.
