Well, I can't say I really understand what the Architect was all about either. As a guess I would say that he was there to regulate the whole schmeal concerning "The One" and make sure he/she accomplishes what they're supposed to do (pick a few people out of the Matrix after Zion gets whiped out so they can all start over again).
To help with the other questions, yes, the Matrix is still around and the closing scene in the park was in the Matrix. It started out that the premise of the series was to destroy the Matrix and free humanity, but I had a hunch it would turn to this peace between man and machine deal in the end. For that reason the Matrix probably couldn't be destroyed right away, since that is the machine's only source of power at the moment, so a lot of people will probably stay in the Matrix. The Architect said that those that wanted to leave would be allowed to, so the captive humans will probably be told the truth and given a choice. I don't think very many would want to go, having to choose between a fake normal life or a real but very hard one. As to what happens to the Earth after the movies, who can say? It'd be in both man and machine's best interests to make the skies clear and clean the planet up to live on again, so I'd like to think they'd push for that approach.
It's all speculation and imagining how things are going to turn out, and I find it mildly interesting on what the outcome would be in the end. Supposedly they're going to continue the story through this online Matrix game that's supposed to come out sometime next year.
