OK, so tonight, Jay and I couldn't decide on dinner. I wanted chicken and brown rice, he wanted chili. So I came up with a new recipe. Here it is:
1 can vegetarian chili
2 chicken breasts, cooked through
1/2 cup cooked brown rice
1/2 cup diced green pepper
1/2 cup diced red onion
1/2 cup mild salsa
1/2 teaspoon each of garlic salt, oregano and black pepper
Cook the rice until tender and the chicken until it is done all the way throughout. Cook the salsa, green pepper and onion WITH the chicken (I pan fried it).Cut chicken into small pieces and then combine everything into the pot of rice. Mix well and enjoy! It's REALLY good and full of nutrients. Makes two big servings.
