Made this for Adam on Halloween.
Here's the
original recipe. I tweaked it to make it easier.
4 oz canned crab meat
8 eggs
1/4 cup water
1 tsp garlic powder
1 tsp cayenne pepper
1 tsp salt
1 tsp black pepper
1/2 cup pepperjack cheese
2 pats of butter
1. Preheat oven to 375
2. Beat eggs with water and spices
3. Cast-iron skillet, melt butter and fry the crab meat for a few second. Pour in the egg mixture. Cook till the edges set, moving the egg mixture around.
4. Put into the oven for 8 mins or until egg sets. Cut into edges and remove from cast iron skillet (or the bottom gets overcooked).
Serve with chilled fruit, or a side salad and some french bread. Delicious and so easy.
Options: use bay shrimp instead of crab, or use crab and shrimp
diced canned ortega chilis and mozza cheese instead of pepper jack cheese
sprinkle with green onions or chives.
add 1/2 cup of mushrooms
Recipe tweak #2: make into an omelet. So much better, not as dry. Use four eggs, beat with seasoning. Heat the crab, set aside. Cook the eggs, put in half the crab and cheese. Top with the rest of the crab and store bought alfredo sauce. Add a few dashes of hot sauce on top. Voila!
