This is the original recipe, which I got from a Betty Crocker recipe mini-mag. You need oatmeal cookie mix and apple pie filling, though, and you can't find any of that in Mexico, so I made everything from scratch:
2/3 cup quick-cooking oats 2/3 cup flour 1 stick of butter 1/2 cup brown sugar 1/2 tsp cinnamon 1/4 tsp nutmeg 1/4 tsp salt
Cream cheese filling: 12 oz cream cheese 1/2 cup sugar 1 1/2 tbsp flour
Apple filling: 1/2 stick of butter 4-6 baking apples (I used Gala and Granny Smith), peeled and sliced or cubed. 1/2 cup brown sugar 1 1/2 tsp cinnamon 2 tbsp flour
Heat oven to 350°. Mix flour, sugar, cinnamon, nutmeg and salt in a bowl; cut in butter using two table knives (or a pastry blender, if you have one) until the mixture looks like coarse crumbs; add the oats. Spread half of this mix on a lightly greased 13"x9" pan, and bake it for 10 minutes.
Beat cream cheese filling ingredients until smooth, then spread the mixture evenly over baked crust.
In a large pan, melt the butter; add the apples, and after a minute or so, add the brown sugar and cinnamon. Mix well for about a minute. If the caramel is too dry to cover all of the apples, add 1/2 cup of water, then add the flour. Keep mixing for about one more minute. Spoon the apple filling evenly over the cream cheese mixture. Sprinkle reserved crumbs over top.
Bake for 35 to 40 minutes or until light golden brown.
