Last night I made
asparagus soup and
warm dandelion greens with roasted garlic dressing. Meanwhile Josh made the legendary LBTs, or Alterna-BLTs. We didn't definitively name them. Leeks, Brie, and Tomato on English Muffins. Oh, they are good. I am craving them again already. Jodi and Josh really really liked the soup, but I wasn't so sure. It's best made with less-than-beautiful asparagus, because it's not as good as just plain steamed asparagus if you ask me. I think I will double the spices and salt next time. It needed more kick, though it's supposed to be comfort food. Also--I used vegetarian broth, but probably the chicken broth the recipe calls for would have had more flavor. The salad was delicious, (anything with garlic, pine nuts, and goat cheese is obviously awesome). (Bonus: I learned how to roast garlic.) I should have spent more time de-stemming the dandelion greens. Or just used spinach, which wilts beautifully.
We had the crazy-unhealthy tunnel of fudge cake from Easter for dessert. (I had frozen it). I threw away that recipe though. I think there are better cakes out there.
I got drunk on white win. In some ways, I wish I would have known about getting drunk in college. I think drunkenness would have improved some of the shows and parties I got dragged to. I didn't need to be as careful as I was.
While I miss my friends in college who would go with me to the drug store just because--just because we liked to be together--I'm glad I'm no longer in a crowd that demands exciting weekends. I thought the best time of college was the weeknights drinking tea and talking and laughing and laying on the couch. My friends generally wanted adventures on the weekend, which often didn't pan out. At the ripe old age of 27, it seems perfectly socially acceptable to choose marathon Friday Night Lights viewings over blow-out parties.
In general, a good weekend for me consists of playing cards while drinking Izzy's, going to movies at the Alamo, and watching a game at a sports bar. We usually go running with our friends Greg & Trish (or, soon, to the pool!). So far, none of these activities have lost their appeal. I look forward to them as eagerly as I would anticipate any adventure.
