Nasty headache has caused knitting to cease for a moment or ten, so here's what's up in my neck of the woods.
Dinners: I've started taking over the responsibility for a couple of dinners a week. Gives me a chance to experiment (yay, Cooking Light Annuals!), and I get to add more fresh veggies to my diet, which is nearly impossible for me to do otherwise.
Today, I half-invented a salad:
2 cucumbers, sliced
5 Roma tomatoes, chopped
1/4 cup feta cheese
2 tsp olive oil
2 tbsp balsamic vinegar
Toss cucumbers, tomatoes, and feta together. Mix olive oil, vinegar together, and drizzle over veggies. Toss again, and chill if desired (I like my cucumbers cold), and serve.
Six servings (1 cup each) = 67 calories each.
Tomorrow will be a slow-cooked BBQ pork tenderloin. I may go buy some rolls tomorrow for the BBQ pork. Need to come up with a beans/veggie recipe for tomorrow, though as gassy as I've been, perhaps I should skip the beans.
Speaking of: Activia should be avoided like the plague (or, Hamthrax, as my aunt's friend has started calling the H1N1 outbreak). It's supposed to regulate your system. Yeah, and makes you gassier than a Shell station. I've spent more time lighting matches in the past week than I did when I was a pagan, and was lighting candles at my altar. I've also learned to drive with the windows slightly down, and with periodic apologizing.
The last of the Activia went into the garbage today. Hopefully, my happy gut flora calm down. You might say that they've been producing more gas than a Republican National Convention.
Two more weeks until I'm done with the first phase of the medical weight loss study. I've lost ~16 pounds so far (since early December), and 21 pounds since November. I'm going to go to Costco and get 16 pounds of pasta -- we're supposed to bring in a food representation of what we've lost in the past 6 months -- and then I'm going to donate it to the Oregon Food Bank.
