Bacon cups filled with curried yam puree and topped with Oyster Mushrooms sauteed in bacon fat and garlic. Served with a Cilantro Mignonette sauce.

Foie Gras Pate with Mard Sous Tipel poached Pears, green tea salt garnish, and toast

Seared with Calvados, creme fraiche, and brown butter Apples served with Cider

Halibut Ceviche
Coconut Milk, lime, meyer lemon, fresh orange, cilantro, serrano and jalapeno pepper, shallots, cumin, coriander, and fish sauce served with coconut flakes, brown sugar, orange zest, and bread sticks.

Lamb Noisette with Lime & Soy and champagne glazed Haricot Verts
