Cooking For People Who Don't Carnival - not quite a contribution

It has been brought to my attention that
commodorified has encouraged people to post on the subject of food security today. She explains that Food Security is defined by the World Health Organisation as existing

when all people at all times have access to sufficient, safe, nutritious food to maintain a healthy and active life.

Food security is built on three pillars:

Food availability: sufficient quantities of food available on a consistent basis.
Food access: having sufficient resources to obtain appropriate foods for a nutritious diet.
Food use: appropriate use based on knowledge of basic nutrition and care, as well as adequate water and sanitation.

Unfortunately I haven't time this month to post with the thought and detail that this requires, so I'm just going to mention very briefly one of my favourite foods: bulgar wheat. It's easier and quicker to cook than rice (wash bulgar wheat, chuck in a pan, add between one and a half and two times as much boiling water, heat until water is absorbed), it's got a nice chewy texture and slightly nutty taste, and it's very good in risottos, to accompany curries, or whatever. Basically, it's designed for people like me who keep making a mess of rice, and I'm not sure why I don't see it around a lot more, so I thought I would flag it.
