It's never enough.
As for him, he hopes that she could possibly be converted to his "vegetarian" way of life. She's young, for a vampire, and he is both flattered and embarrassed by her attentions. She isn't yet jaded or cruel like her peers, and he genuinely enjoys her company.
He knows in time she will be, if she stays. It is simply what happens to those who are part of the Volturi.
So he requests that she be allowed to leave with him and is promptly refused. None of the three Volturi leaders want to lose their fisher who so easily gets the humans to follow her. They like her talent and there is no question of her leaving.
He is grieved, and she is heartbroken. She wishes she had the courage to say how she feels, and to ask him to stay. She does neither.
And he leaves.

Over a century later and they meet again. Her eyes are cold and her tone clipped as she greets him before quickly disappearing to do her job. Too many years of herding the human sheep to their death has taken their toll.
Bitterness had taken a hold of her, even before seeing him and his beautiful, golden eyed mate. They have their freedom and their love, while she has castle walls that inch ever closer and can never lose the smell of blood.
