An excellent lunch - leftovers from last night's meal (well, I cooked an extra portion). It's currently my favourite easy pasta dish:
Pasta and chick peas with lemon and olives
For 2 portions:
Cook c.220g pasta (cup-type shapes are best - conchiglie or lumache)
Meanwhile, drain 1 tin of chick peas, chop a decent amount of stoned olives (I prefer green) and extract juice of half a large lemon (and zest, if you're feeling energetic).
When pasta is cooked, drain it, put the pan back on the heat, add a sizable chunk of butter and wait until it's just sizzling, add lemon juice and when it's emulsified add everything else, plus some freshly ground black pepper.
Job done!
