Easy Banana Muffins Recipe
3 large bananas
1/2 cup white sugar
1 egg
1 teaspoon baking soda
1 teaspoon baking powder
1 1/2 cups all-purpose flour
1/3 cup melted butter
1/2 teaspoon salt (optional)
nuts (optional)
chocolate chips (optional)
Mash bananas, add sugar and the slightly beaten egg.
Stir in melted butter.
Stir in dry ingredients.
Spoon into medium size muffin pan (I use the paper muffin cups inside pan).
Bake 20 minutes at 350F degrees - 375F degrees.

- I cut the sugar to 1/4 cup. With the sweetness of the over ripe bananas and some other ingredients mentioned below it was plenty.
- I subbed 1/2 cup of the flour with rolled oats. More Fiber and texture.
- I only used 3 tbsp of butter and subbed the rest with applesauce.
I also used 1/2 cup of dark chocolate chips. (55% cacao) The chocolate and the applesauce really helped the lack of sugar.
It made 12. There are currently 5 left so they are quite tasty.
Next time I plan to try using some whole wheat flour.
