My request for chili recipes earlier this week was actually prompted by seeing
this recipe go by in my twitter feed. It looked a little unnecessarily complex, but it's actually what I ended up using with the following alterations:
- I used red bell pepper instead of green, because I hate green peppers
- I used black soy beans instead of black beans to ratchet up the protein
Also, hand crushing tomatoes is a great way to remind yourself you should really wear an apron in the kitchen. I might use petite diced or stewed tomatoes next time to keep from making the giant mess I made hand crushing.
It was really, really tasty. I would totally make this again. If I ever finish the first batch. I've already frozen some of it. Might have to freeze more.
