dinner was tasty and i want to remember what i did so i can do it again...
you need: a potato, chicken fingers, buffalo sauce, chili powder, chives
bake potato (in microwave works fine)
scoop out insides and insides set aside
lightly coat skins with olive oil, sprinkle with chili powder
bake at 400 for 10 minutes (or until skins are slightly crispy)
mix buffalo sauce in with scooped out potato guts til you have almost creamy consistency (should be slightly dryish)
toss in about 2 tsp of chives
put chicken fingers in skins, pour potato/sauce/chive mess on top
eat.
