Yoh honestly doesn't take an interest in anyone unless he sees some kind of use out of them, and since Minatsuki told him to back the fuck off of Eirin, he hasn't had much of a chance to form an opinion. He's mildly intrigued though. Despite what Mina says, he doesn't view Eirin as a threat at the moment as long as she leaves his sister alone or doesn't try to act like any kind of mother figure toward her. He will be all over that if she does either thing.
His opinion of Minatsuki hasn't really changed. He's been so focused on "saving his little sister" all these years, that it's just sort of a permanent thing. He knows they have some more freedom here and can't just be together all the time (he can't.... be apathetic siscon reading nonchalantly in the background) and he's trying to let Minatsuki grow on her own a bit, but it's honestly hard for him. As long as she's happy, he'll be happy, but it damages him (as usual). And he's reluctant to believe Mayfield could actually mean anything to them because he's afraid of losing her. He secretly enjoys the moments were they actually get to have a calm conversation or do things together that don't involve beating him up.
