1. Klaus is not his real dad. Hiccup has to constantly remind himself of this, especially since lately the line is starting to blur more than he would have originally thought.

2. Really giving in to calling Klaus his dad would mean that he's letting Mayfield win that one, right? The town wants him to live with his family like they're his real family. But they're not. If Hiccup starts calling Klaus his dad, then that means he's accepted the roles Mayfield has assigned to them. He's not really okay with that.

3. Calling Klaus dad solidifies the fact that his real dad isn't here. His real dad is somewhere else. Maybe, if Hiccup keeps himself from calling Klaus dad then it'll be more of an incentive to find a way home. Right?

4. Accepting Klaus as a father sort of makes Stoick almost... less real. He's already starting to have trouble remembering home sometimes, and that... that's really bad. If he starts calling someone else his father, then he loses a part of home. Hiccup wants to hold on to every piece of home in his mind that he possibly can.

5. It's still kind of awkward calling Klaus "dad" anyway. He's just so... Klaus. Hiccup could never call him "Herr Baron" or whatever, partly because the titles mean nothing to him and partly because it sounds really weird. Hiccup started off calling the man by his name and changing it now feels weird.

+1. No matter how many reasons he might have, the fact still remains: Klaus is another father to Hiccup. He trusts him, he loves him like his father. That alone is reason enough to call him what he is. Dad.
