rararando was with m'girl and I, and we had this for dinner yesterday. It's chicken curry with potato, eggplant and lady's fingers. The white layer is santan, coconut cream, which I forgot to put in earlier. I stirred it in and simmered the curry for another 10 minutes. I like this curry with just chicken and potatoes, but I didn't feel up to cooking the eggplant and ladyfingers separately. The gravy tastes a little bitter from the vegetables. Lately our curries are more fragrant because my mum gave us a curry leaf plant and we use the leaves in curries. Except for Japanese-styled curry.
