Chinese New Year Birthday Dish

Yesterday was the seventh day of the lunar new year on which the Chinese celebrate 'Everyman's Birthday'. In Singapore one of the dishes is 'yee shang', created by a Singapore Cantonese chef sometime in the mid 1960s. Nowadays there are many variations of it. I like the traditional version but don't have the expertise to slice the traditional fish, so at home I use salmon and a sweeter sauce with the addition of applesauce. The restaurants offer it throughout the 14 days of the lunar new year. I like the version at Dragon Phoenix".
