Yesterday was the seventh day of the lunar new year on which the Chinese celebrate '
Everyman's Birthday'. In Singapore one of the dishes is '
yee shang', created by a Singapore Cantonese chef sometime in the mid 1960s. Nowadays there are many variations of it. I like the traditional version but don't have the expertise to slice the traditional fish, so at home I use salmon and a sweeter sauce with the addition of applesauce. The restaurants offer it throughout the 14 days of the lunar new year. I like the version at
