On weight gain

I have trouble talking about this issue with people, partially because a number of people I mention it to are frankly offended that I'm concerned about it. That issue is, of course, weight gain, and the fact that I have a very difficult time doing so. Not even the munchies have been able to help me. At a BMI of 18 or so, I'm somewhat underweight. If I could get in the 140-150 lb range consistently rather than the 125-135 range I usually weigh as, it would be a huge benefit to me, I feel, both in terms of overall health, and in terms of my jiu-jitsu game.

The way to gain weight is to eat more Calories. I have trouble forcing myself to eat 2000 Cal most days, let alone the 3000 or so that would be best for weight gain. I've got to find better high Calorie, low volume foods to eat, and I need to eat 4-5x a day rather than the 1-2x I usually eat. This should be consist of mostly healthy stuff, fruit and nuts and beans, so I feel like I'm going to have to spend all my time shopping and cooking and eating.

An added difficulty are my digestive problems, which results in diarrhea following large amounts of dairy, red meat, and high fat foods, which are all good weight gain foods. Do I just eat peanut butter and raisins all day?

It just seems so daunting a task!
